I’m curious about the egg yolk in this recipe. I’ve never seen truffles using egg yolks. Has anyone made them yet?

Haven’t made them yet but I am really nervous about that egg yolk and was thinking of subbing something else (not sure what, cream?) for it…

I’ll have to look at the recipe again, but I’m 99% sure you can leave the egg yolk out. I would not add more cream. Usually the egg yolk is there to add a richness. I bet these truffles will be plenty rich w/o the yolk. I’ll look at the recipe tonight and update the P&Q if I “change my mind” 🙂
